He knows who is what based on how the producers are showing it to the audience. The contestants could work it out the same way.
In earlier series the people on the chopping block came to breakfast last, that way they should be known as faithful.
This year he said that the last 2 in cages are faithful because that keeps the tension for the TV viewer.
He also said before that the traitors are always a diverse group. For example in celebrities, when all women but Kat had been killed of or banished it was clear she is a traitor as the bbc can’t go with an all men group.
Basically, if you know how TV works you get more out of the setup than the actual contestant behaviour.

At the round table when they have all locked in their vote. The first contestant to reveal their vote it is always set to make the voting the most tension. Quite often when the voting starts it looks like someone is going to get voted off but it then swings onto another who actually goes. I assume there are cameras watching each person as the write on the slate to to work out the best starting place.

Jo Marler’s thought process showed some understanding of the Producers’ needs too. His ‘Big Dog’ theory was along these lines. All the contestants have studied earlier seasons (there are enough of them out there) so they should be using this to inform their game play.

I did like Richard Osman or Marina’s point that there are two envelopes by the murdered/banished players seat in the Uncloaked show when the Traitors are revealed to them but we have only seen them open one.
Is it to do with the ‘Family Tree’ and relationships between some contestants? - we already have seen mother / daughter and Boyfriend / girlfriend.

I don’t know. We quite often find ourselves asking whether any of them have actually watched the show before, their grasp of the producers requirement for cliffhangers being a bit lacking.
For example, if any situation leaves two players in a situation where one will be murdered, like Maz and Reece in the cages, then you can bank the fact that both of those last two are faithfuls.
But then it’s the psyche tactics that make it so watchable. As others have said, if you are certain you know who the traitors are then the worst thing you can do is get rid of them because they’ll be replaced with someone new. And the remaining traitors will kill you the next day.
But if you keep it to yourself you’ll likely be accused of being a quiet one who’s probably a traitor and voted out.
Best tactic is probably to be a nice and easily led ditherer and hope you don’t get murdered for shock value, to shake things up; which they do so often that it shouldn’t really be shocking anymore.

Really didn't understand the big argument of "If you vote me out and I'm a faithful then it must be X". Her only evidence seemed to be "cos I'm always right". She was correct but all she presented was anecdote and opinion. Aren't barristers supposed to understand evidence.
