I never understand this question.
if you can give youself a perfect lie. why wouldnt you. The pros certainly use tees with irons.

I spent a few years in 90s not using a tee. Not sure why tbh. Always use a tee.
why not just stick a peg in the ground at the place you find that nice lie?
I will always use a tee with an iron on a par 3, or tight par 4, but think 'teeing the ball up' is the wrong ways of looking at it.
but that said I'm putting a ball on a tee, but the tee is always pressed down so the the base of the 'cup' is in contact with the ground, my divot is some inches target side of the ball.
so if the tee hasn't snapped it usually requires using the club to lever the tee out of the teeing area - a common courtesy to other players & the ground staff to make sure you remove the tee.
do tend to notice that oft times both mid & higher handicap players will tend to tee the ball "up" - so a good deal of the stalk visible above ground - so a ways too high.
then they tend to have their miss-hits by hitting the ball a ways too high on the face so the ball flies too high & a little ways 'dead' in terms of forwards trajectory through lack of ball speed so most often the shots are a good ways short of target.
as many folks oft times hit their fairway iron shots 'fat' or 'thin' (part of the same swing issue) they would be a ways better off putting the ball on a tee, but with that they have to develop the confidence to tee the ball 'down' & strike down & through.
big Jack always said if it's in the rules to give yourself a better lie on the tee ground, to give yourself better chance of solid contact -why wouldn't you do that - he always did throughout his career.
The modern wooden (or plastic tee) is a fairly modern invention.
Might as well give yourself the best lie possible - always tee it up
