Sounds to me as though the old girl was quite nice about it. She didn't do in front of her pals. She took the effort to come and tell you in person. As a result it may prevent you getting a rollocking from a committee member or the like.
A lot of clubs don't allow chipping onto putting greens because, as others have said, some people may be daft and try the lob shots.
If you are hitting these shots you don't need to know how they react on landing you just need to know where they land and that can be done on any peice of turf.
My advice would be to ask an official for clarification of the rule and perhaps suggest they replace the sign if indeed that is the case.
