Pretty much simple fair but my chocolate fridge cake ( known in our family as Splodge ) is a winner
Chicken and Sweet Potato Stew
- 4 x Chicken Breast
- 2lbs Sweet Potato
- Packet of Baby Spinach
- 4 large, 6 Medium or 8 Small Shallots
- 2 cloves of Garlic
- 1 cup of dry white wine
- 2 teaspoons of fresh Rosemary or half teaspon of dry Rosemary
- 1 and a half teaspoons of white wine vinegar
- salt and cracked black pepper to taste
Method
- Trim Chicken Breast
- Peel and Dice sweet potato
- Peel and finely chop shallots
- Peel and crush Garlic
- Brown/seal the chicken in cast iron casserole pot, or frying pan if no casserole
- Add potatos, Garlic, Wine*, Rosemary, & spinach into casserole pot or dish
- Stir and cook on low heat or cover and place in oven until potatos are tender and chicken is cooked.
- Once cooked stir in white wine vinegar.
*White wine could be replaced with chicken stock.
My GF is not even allowed into my kitchen, I cook everything.
There's a touch of the marco Pierre white about me.
For anyone up north, there's a butcher in bamburgh that simply does the best steaks known to man. I do a 120 mile round trip for this butcher.
What's his bacon like? I canna find decent bacon anywhere, tried farm shops all over the place and they all have that bloody awful white gunk that oozes out when cooking.
The butcher up Corbridge was good for a while but even his is now full of water.
