i know that this could be done in ladies comps (Alt Day) but I am unsure if this can be done for men's comps and if so for those who use V1 how do you do it so that a different CSS is worked out for both days?

They are legitimate for both men and women.
Run each day as a separate comp. This will provide two CSSs.

I'm not sure how V1 provides the amalgamation facility but it's in the manual somewhere. But it will be done after both comps are closed.

Yea our place runs it over two days due to not enough hours in the day. CSS can vary wildly between the two days.
