So I have a Donnay 3 wood that badly needs replacing, I could go for a straight swap, but I'm leaning more towards a 4 or 5 wood as there easier to get airborne off the fairway, but what sort of distance gap can I expect between say an 18 degree 5 wood and a 21 degree hybrid?

A decent one I would say.

The shaft will be an inch or two longer on the wood and, assuming you don't have a super-high swing speed, the wood will keep the ball in the air longer so carry further.
My "4" wood is actually a High Trajectory 3 wood. The head is the same size and the shaft is the same length as the standard 3 wood. Most true 4 woods have a slightly smaller head and shorter shaft - not much, but enough to make a difference.

cheers Imurg, I think the length of the shaft is one of the main reasons I struggle with a 3 wood off the deck (that and im rubbish ;) ) hence I thought the 5 wood would be a better option, would it be safe to assume that would be about 15 yards extra distance or am I way out here?
