Playing it off the deck may compress (squeeze) the ball more, and get a better flight.

I just think I need to remind myself that I CAN hit it perfectly well without a tee, so a higher tee could just lend itself to the ball coming out the top of the face...which is never as good.

I think in general, I'd rather tee it down and catch it a bit thin, than tee it up and go underneath it!!!

I'm pretty sure hybrids create more spin (getting them airborn and making them easier to hit) than an iron, this in itself will take off some of the distance you might have expected but make them easier to control. I think you're right about teeing it up and catching it a bit higher on the face.. losing a fraction of distance, after all they are often referred to as "recovery clubs" and not "hit 'em off a tee" clubs :)
