Could anyone who uses their club software share how the competitions are drawn, in particular the ones like summer / winter knockout etc.?

I understand that players sign up on the software like IG or HDID and then the club releases the draw - which I assume is done by the software.

The question is whether there are any parameters for the draw that the club can modify to affect the draw or is it truly random?

You can apply seedings and use handicaps etc

It’s a little bit of a pain but mainly is just random and then you can move a few around if there is any issues

The available options depend on the software.

In general, draws are random (although I found with ClubV1 (the HDID backend software), the last entrant was always allocated the same slot in the draw) or manual, and can be manipulated before publication.
ClubV1 offers true seeding whereas IG is by manipulation.
IG offers half a dozen options for allocating byes, whereas ClubV1 uses only two methods which are fixed and dependent on whether the draw is seeded or not.
The automated player notifications are much better with ClubV1.

It would be nice if they also offered individual entry with a random/high-low/etc. draw for pairs, but IG only partly facilitates something like this for stroke play comps.

We have highlighted a number of times the need to IG to develop their KO draws to be more flexible

It's far from just the knockout draws that have scope for improvement. Unfortunately, most ISVs seem more focused on the club/event/booking management side and comps seem to be almost an afterthought, so the chances of getting improved functionality there any time soon seem remote unless a huge number of clubs raise the same request.
I have a very long list of things that IG should facilitate but doesn't, or does facilitate but only partially or badly - and many of them are facilitated (much better) by ClubV1 and/or other ISVs.
However, overall, IG does tend do a better job than the others (particularly the interface) but some of the shortcomings were surprising (we migrated from ClubV1 about 12 months ago).
