In my eyes its this - cropwell bishop Stilton, you can get it in Waitrose.

It is such a good cheese, it has exactly the right amount of flavour and power and goes well with so many different things, I had it in stuffed mushrooms with spring onions with my steak last night.

There is one I like which is a layer of marscapone, sandwiched between two layers of dolcelata. This is like lard, but tasty. Especially when washed down with a nice gewurtztraminer.

Don't knock it til you tried it.

How can you restrict the choice to one when you have stilton, jarlsberg, emmenthal, dolcelatta, gorgonzola, gruyere etc ? Some are great on their own, some with crackers and some for making sauces. If it has to be just one, it has to be stilton.

And, yes, Lea & Perrins Worcester Sauce is a must with toasted cheese.
