Summat different for a BBQ?

If the weather ever does take a turn for the better.
I'm fed up with the usual burgers and sausages so what else could I try?
I had a quick look on the internet over the weekend and came up with some cracking chicken burger, corn on the cob and prawn skewer recipes.
Anyone else got some decent ideas?
 
What type of bbq? A gas one, or a charcoal one?

If gas/something you can leave on longer, could look at doing some pulled pork, leaving it on there for a while. Same with Ribs?

Could do a big fish wrapped in tin foil

They do great bbq packs, seafood, brilliant in house butchers. They also sell spicy rubs which you can use on the meat. We bought a pack for a weekend away a couple of weeks ago. I bbq'd pork belly with a chinese rub and thin sirloin steaks on their own. Lovely.

Big fan of prawns on a bbq, plain no need to do anything to them.

It's charcoal btw.
 
I make lamb burgers which always get a good response.

Finely chopped onion lightly sauteed
Teaspoon of cumin, ground coriander, ground caraway.
Dollop of tomato puree, large dollop mint sauce.
Mix together then mixed through pack of lamb mince.

Shape into burgers
Yummy
 
wrap potatoes in foil & pop them in the coals, baked potatoes.
toasted sandwiches on the grill are lovely.
fish/shellfish always good
corn on the cob
steak (best marinated first)
 
Always go for Rump Steak, pork rips or bell pork slices soaked in BBQ sauce.

or like the weekend, fresh caught Mackerel on a portable BBQ on the rocks where you caught them .
 
Good quality whole fillet of beef, rolled in plenty of black pepper and cooked over a very hot BBQ until the outside is seared but the inside is still almost raw. Let it cool, slice it as thinly as you possibly can and serve it on a bed of rocket leaves with shaved parmesan and a reduction of balsamic vinegar.

When's your next BBQ mate, i'd happily make the 3 1/2 hour drive!
 
Corn on the cob. Have a bowl of cold water with lots and lots of salt dissolved in. Put the corn directly on the charcoal until cooked. Then drop them into the salt water for a few seconds and enjoy.
 
i like a boned and butterflied leg of lamb with either Moroccan, Greek or Tikka marinade with salad, flats breads and yogurt dressing.

Yup this for me too, there's no need to be fancy, just make sure the meats good quality, no ones gonna complain when they see/hear/smell fillet steak on a braai



And chuck on some nice thick tuna steaks for the veterinarians ;)
 
How about a nice trout on the barbie ? Butter, almost ds and some mixed herbs inside the belly, a good doze od salt and pepper on the outside and wrap it all up in tinfoil. It will cook in 5-10mins depending on size and will just fall off the bone when you open it up.
 
BBQ Lettuce

Buy a couple of small Gem Lettuce - cut in half and put a small amount of olive oil on them.
BBQ them for a couple of minutes on each side - add a squeeze of lemon and salt

Something different, I do them every time I BBQ

I know this has been suggested already but I strongly recommend making your own burgers - use 50% beef mince, 50% pork mince - mix with grated cheddar and cooked onions. The pork mince makes them!
