Excuse my ignorance, I understand stableford but how does the medal and texas scramble work ?

Presumably, that's the scoring side of it.
Medal is Gross score - total of all strokes. A Nett score can be calculated by substracting Playing handicap from Gross score.
Texas Scramble has various 'flavours'. The one that seems to be used most is that 10% of sum of team playing handicap - 15% is often used for 3-ball teams - is subtracted from Gross score. Gross score is found in the usual Texas Scramble way - all Drive, select a shot to play; all play from there; repeat until ball holed. Some require a certain number of each player's Drives to count.
