I recall after a successful interview being told they liked me because I used the word 'we' a lot.

If I speak or write generally and individually irrespective of gender I will usually choose to use 'they' or 'their' rather than mangle 'he/she' and 'his/hers'.

I have always done that if I have not known who the person was. I now increasingly do if I am not sure how the person considers themselves (although 'themself' is now often acceptable as the singular form).

That does work because they thought you were royalty:
'The use of ‘we’ instead of ‘I’ by a single person, as traditionally used by a sovereign.'

Use of the 'royal we' should be in any guide on how to pass an interview.

The Queen also uses 'one' to signify her status as a sort of deity, as in one god.
