I recall after a successful interview being told they liked me because I used the word 'we' a lot.

I have always done that if I have not known who the person was. I now increasingly do if I am not sure how the person considers themselves (although 'themself' is now often acceptable as the singular form).If I speak or write generally and individually irrespective of gender I will usually choose to use 'they' or 'their' rather than mangle 'he/she' and 'his/hers'.
