You can print out scorecards that have symbols on that you just underline. It's very easy.

I may be wrong and will probably be shot down in flames (like my golf at the moment) but I am pretty sure you can customise SS2 so that you can set the handicap levels for the 8 key facets

Each player in Scoresaver 2 has a set of targets for the eight key stats. These targets are either "Automatic", where the built-in handicap standards are used or "Manual", where you can set your own targets. "Automatic" are used by default. To change to manual: double click your name in the player list on the main screen and then select the Manual Option.
