The score on each hole can matter if the card counts towards an eclectic score. There seems to be a lot of fussiness about signing and certifying a scorecard and much less about having the gross scores correct, which is what the Rules require. A returned scorecard requires the player's handicap, 18 correct gross scores and signatures of the player and marker, nothing more. The Rules outline what to do if there are errors/omissions in these requirements. The Committee is responsible for everything else.
Also in all my many years of playing I have really never experienced anything other than at end of a round marker and players running through the card checking score for each hole. Occasionally I’ll do a quick gross or stableford total after 9 to pick up any mistakes while still reasonably fresh in mind.
Never signed a card in advance of a round, but not a bad idea at all - though it would feel a bit weird.
