Mind game questions

Like most amateurs i take lessons and am always looking to improve on the consistency in my game.

My problem is, that due to work, I don't get that much opportunity to practise (once a week tops). I've recently had a short game lesson , and whilst, my current technique is at best adequate, I still need to practise what our pro has taught me.

However, in the mean time, In club competitions, I'm stood over pitches / chip shots torn between what I know how to do, and what i know I should be doing. I see the shot I want to play, where i want to land the ball etc, I'm just always in two minds about how to execute the shot. I inevitably end up squeezing the club until my knuckles turn white with all sorts of swing thoughts running through my mind, before proceeding to stab the ball in the general direction of the flag.

As a side question to fellow forumers . . . . At what point given the working man's restrictions on practise, do you eventually put into competition play what you practise on the course ?
 
How do you cope with first tee nerves when playing with someone new and unfamiliar? I find I cannot keep the butterflies at bay for at least 2-3 holes.
