Up that way you really should play links courses.
Craigielaw, Kilspinie, Gullane 2, Dunbar are probably the best value courses - in order of distance from Edinburgh. G2 isn't really hilly, though 3 and 17 are severely up.down resp.
Mortonhall and Longniddry would be my recommendation for flattish non-links courses.

I'd class Longniddry as links in style. Certainly more links than parkland! A few holes snake through trees but overall in my opinion its very much a links track!
Pumperherston has severe drainage issues and severe member issues (I know as I am one)

I have a personal hatred of Mortonhall, something to do with my being gash whenever I'm there.I'd class it as hilly,though, it's on the same hill as the braids!
Personal suggestion within Edina would be duddy, outside, gullane.

Oops! I meant to type 'Monktonhall' which is the (James Braid) course, with the Art Deco clubhouse, in Musselburgh.
Mortonhall(another James Braid design) is indeed hilly - and not cheap? First place I broke 80 - with the haar at ceiling level! Watch out for the local ball thieves on the serpentine-ish par 5 (4)! And I seem to remember a heart-attack hill (5?).

You missed out the "L" in Clubs in your post making it read as "cubs". Baden Powell founded the Boy Scout movement which incuded the Cubs.
