How easy is it to install a shaft adaptor to a new shaft and what epoxy is best for the job.

Easy job. Just make sure you buy the right one. Some makes, e.g Titleist, use different length adapters according to which wood.
I just use normal 2 pack epoxy (quick set) I have used lots of different makes through the years more than often the stuff from the Pound Shop
After glueing leave so the shaft is stood upright with the weight of the shaft on the adaptor. Setting causes heat which can push the adaptor slightly off the shaft.
