I have had this problem for a while now and its starting to get on my nerves :(
I dont mind the divot with my short irons and wedges, but with my mid to long irons i dont want to take a divot and its causing a inconsistant stike. These divots are fine on the target line but are way to deep. This is robbing me of distance as well as the consistance of my stike.
Can anyone tell me why this is happening or how to stop it :S

There are several questions to ask first, without seeing your swing.
You say your divots are straight and deep?
Is your aim straight and where is your ball positioned in your stance?

If your ball is forward of centre and you're taking deep divots after the ball, you must be sliding your hips to get so far ahead of the ball to give you the steep angle of attack.
Try and turn more rather than slide the hips on the downswing.
