Why is golf played over 18 holes?

Does anybody know why we play 9 or 18 holes? Why not 10 or even 12 or 20 to match the old proper money?

Always thought because you got 18 nips out of a bottle of whisky as us Scots like a nip in the winter thats why it was 18 holes.
