On Sunday a playing partner decided to chip to the green using a 56 deg wedge, not something they would normally do, as it was just a friendly knock. Two attempts. Both of them like this :-Swing at the ball. Hit the ground before the ball. Club face then bounced up and swing path did not cross over the ball. So my question is, would this be classed as a whiff / airshot and therefore add one to score, or no penalty as the club did not cross the plane of the ball, (is that the right term). Hope I've described this ok.
 
If they were intending to strike the ball (which it sounds like they were) then yes they would both be counted as a stroke.

I get that, but remember Tigers swipe at the ball on the tee a few years ago when a fly, or sommat, distracted him and he somehow pulled out of the shot making the club head go around the ball and therefore not break the plane. This didn't count as a shot so isn't the scenario the same?

No. Tiger actively moved the plane of his swing to not hit the ball, hence his intent to hit the ball wasn't there. Your PP intended to hit but the club was deflected by him playing it badly.
