We are playing some competitions over 2 days where players can choose which day to play.

Can a player go out and practice on day 1 and then play the competition on day 2 ?
 
Yes you can. Interpretation 5.2b/3

When a competition is scheduled on a course over consecutive days and the Committee schedules some players to play on the first day and others to play on a later day, a player is allowed to practise on the course on any day that he or she is not scheduled to play his or her round.

For example, if a competition is scheduled for Saturday and Sunday and a player is only scheduled to play on Sunday, that player is allowed to practise on the course on Saturday.
 
As detailed yes you can. We had to disqualify someone in our club championship who played 9 holes in the evening having played in the morning as he was due to play the second round next day.
 
Yes. We have competitions over the bank holidays where you play two rounds over the three days so you could play Saturday in the comp, have a roll up game on the Sunday and play the second round on the Monday

You are not permitted to practise on the course before a stroke play round on the day of a competition. Nothing is said to prohibit you from practising after your round and on the day before your next round Rule 5.2b specifically mentions that:
  • A player may practise on the course after completing play of his or her final round for that day.

The decision taken (not by me) was that the competition was a 36 hole competition (albeit over 2 days) and thus practicing on the course in play was not allowed during the competition.
