As many are working from home just now I thought I'd share a quick and easy recipe for a snack lunch.
3 or 4 rashers of bacon
1 small onion
Some sliced mushrooms
Rice
Chop the bacon, onion and mushrooms into small pieces. Dry fry the bacon (contains enough moisture already) for a minute then add in the onions and mushrooms and continue for a few more minutes. Add spice to flavour ( chopped chillies or chinese 5 spice work well).
Boil some rice, add in some frozen peas and sweetcorn a couple of minutes before the rice is ready and add salt as required.
When the rice is ready, place in a bowl and pour the bacon mix on top. Add a sprinkle of sweet soy sauce.
