Shazam - listens to music and tells you what it is
Sky - can remotely record programmes from the phone
PGA Tour - see scores, player info, stats etc
ebay, Paypal, facebook
bubblewrap - pointless but fun game
 
Flashlight - turns your screen bright white.
Units - convert pretty much anything you can think of.
FlightControl - addictive simple game landing aircraft.
Glyder - fly around different 'worlds' collecting crystals and completing tasks.
UnblockMe - Infuriating puzzle game.
WeatherPro - the best weather app I've seen.
 
You can get watered down free versions of a lot of stuff to see if you like it first though.

I can't remember which of mine were free but the weather one was 2 or 3 quid and well worth it imo.
 
Best ones I have downloaded are;-

ebay - have bought things in the pub! Care required.
shazam - brilliant music recognition app with links to iTunes and YouTube
AroundMe - fairly self explanatory. Tells you what's around you, bars etc.
Mini A-Z Edinburgh atlas - good map with no need for WiFi connection
EdinBus - realtime bus arrival times in Edinburgh
Facebook - better than the real thing!
Photobucket - so I can see all your nice photos
MultiCounter - keep golf scores, records of anything
iDisk - links you to all your iDisk info or documents on my Mac.
100 Pushups - for fitness freaks. Cool app to get you there in a set time
 
Peggle - Legendary peg based game
iCopter - Addictive
Flick Cricket - Bowling might be worst thing ever, but you bat first, so fun for a couple of minutes
Tapword/Scramboni - similar word games. Scramboni being played online (and can be played from pc, would recommend)
Conquest - Game of risk (download the lite version) it's quality!

And golf related FreeCaddie is shocking. I couldn't pick up GPS at my course rendering it useless x
