cover songs that were better than the original

I love Florence's version of 'You've Got The Love'; and Disturbed's 'Sound of Silence'.
 
A good cover version should IMO be a new take on the original and not just a copy. One of my favourites is Fine Young Cannibals version of The Buzzcocks’ Ever Fallen In Love. Not better than the original, but great in its own right.
 
And Florence again when they stood in for the Foo Fighters at Glastonbury and covered 'Times Like These' - fantastic version.

Off to check that out. For You is in my Top 3 by Bruce and cried when I finally got to hear it live in 2016...solo piano opener...amazing.
It is in my top 10 songs.. Nothing against Springsteen as Born to Run is also in my top 10. Chris Thompson has a great voice. You may recognise his voice from War of the Worlds, Thunderchild.
