Can anyone help me out understanding on how the dot 1 and dot 2 works on the wedges ? I'm looking at buying a cg 16 56deg but the 1dot is 8 bounce and the 2 dot is 14 bounce but is there a difference in something else like pings Dot system.

I believe all the dot signifies is that its the higher bounce version of that loft. One dot lower bounce, two would be the higher bounce.
 
The dot system represents either what Cleveland call Standard (2 dot) or low (1 dot) bounce, each club has different degrees of bounce.

for the CG16 56* you have two bounce options Standard at 14* or low at 10*

The CG16 60* wedges bounce options are different the standard is 12* and the low is 8*
