Very good video and explanations. Only one slight thing that I noticed - when taking unplayable relief and using the back-on-the-line option, the ball can roll closer to the hole than where it first touches the course, but can't roll more than one club-length from where it first touches the course. This is applicable anywhere when using "back-on-the-line" procedure since the "relief area" is not defined until the ball is dropped, and then the "relief area" is within one club-length of the spot where the ball first touched the course (including nearer the hole).
 
Just watched this video, in my opinion item 5 timed at 10.30 the reference point is wrong.
There is room behind the ball on the revetted face for a reference point ( albeit only a few inches) so using a reference point in the video ie on grass is wrong.
I don’t believe this situation falls into clarification 16.3b/1
If I was refereeing I would say the reference point in this situation is directly behind the ball and would take the player through the drop, drop, place, place procedure until the ball was back in play.

From my reading of the rules, I would agree with you, you should attempt the 2 drops, if the ball doesn't come to rest within 1 club not nearer the hole or in the hazard (and it won't place at rest on the spot where the ball hit the ground from your 2nd drop), you then find the nearest point not nearer the hole where the ball can be placed at rest (I don't think this would automatically be outside the revetted face as implied in the video)

That's certainly what the Rules say to do. It might even be difficult to drop the ball such that it touches the course in the relief area above the sand.
A referee might realize this, and for expediency, advise the player to do what the video shows.
 
There is now a comment on this video from GM saying they agree the ball should have been dropped on the revetted face etc
