As for iconic clubs, was is Sarazen that first put bounce on a sand wedge now that's got to be iconic for the way it's changed wedge design.

Sarazen did play around with wedge design, but was merely the first to win big with the 'new' designs - that started a few years earlier.

Dave Pelz was the inventor of the 2-ball, which definitely qualifies.
Ping Anser and Eye 2s, especially the Cu-Be ones.
Acushnet Bulls Eye.

Not sure about Mizzie TP9, but the TP11 was the beginning of the line that culminated with MP33
I guess Big Bertha irons have to be in there. The Driver certainly.
R7 Driver probably, but the R510TP was the real start of that. And the TM360 was the real start of big-headed Drivers in the mass market.

Steelheads and V-Steel were about the peak of the 3-wood tech, if maybe not iconic. RBZ could be a candidate, but I don't think it will last.

TM Original Rescue, though not the first. Ernie had a lot to do with that - while using TM300 irons, which I have to include.

Titleist 600 series blades - the 681 T-stamp, either numbered (reputedly Miura forged) or un-numbered (Hoffman) being the epitome.

Those are about the only ones from my experience that qualify - as either first/dominant of a quantum change, start of long running line, in bags way past new models came and went, or that huge numbers either played or aspired to play.
