Not had this for some time but got home after our 3 clubs + putter comp and fancied a snack.

Rustled up some Egg & Onion sarnies thus:

Ingredients:

Eggs x 2 boiled medium
1/4 Onion diced up finely
Decent dollop of mayonnaise
Salt & Pepper to taste
Bread slices x 2 white buttered

Method:

Peel eggs and mash up with a fork adding onion, mayonnaise, salt and pepper to taste.
Bung the mixture between bread - cut into quarters (if feeling posh)

Et voilà - Robert is your father's brother.

Reminded me of one of my eggy favourites from childhood. 2x soft boiled eggs mashed in a cup with diced bread and butter mashed in it too!
 
Today is simple food day here;

Breakfast - Sausage Sandwich, granary bread, brown sauce.

Lunch - Chicken & vegetable Soup, buttered baguette.

Dinner - Slow cooker gammon, bubble & squeak, poached egg.
 
French Toast

3 eggs
Half glass of milk
Sugar
Butter
Tomato sauce.

Mix eggs, dessert spoon of sugar and milk. Dip bread for a few seconds on each side and fry on a little butter. Turn until both sides are golden and serve with either Branston pickle or tomato sauce. Had it twice this week,excellent.

Blimmin delish

As someone who makes egg sandwiches at least once a week I had an epiphany last week you don't have to peel the eggs, take the top off like are eating a boiled egg and spoon the egg out, so much quicker.
