Good morning, are there any flaggers on GM? Would like to know the going daily rate, just had a quote and I'm blown away! Maybe I've just lost touch because it's something I've always done myself, any advice appreciated.

Get a price for the finished job !
A day rate for most tradesmen now is £140/£160 .
If they are short of work they can drag it out.
On a fixed price they will finish the job quicker.
 
I had some done late 2019 and the prices quoted IIRC were about £90-£100 a square metre, obviously defendant on the type of flags used (we used Indian Sandstone).

As someone once said;
That’s very cheap.
You won’t get that rate in a city here.
The labourers earn more than that.
 
My builder quoted £80 per sq m in 2015. He said that 25% was material the rest was labour. It’s all in the preparation, making sure its dug out to good depth and then filled and compacted with thre correct sizes of hard core.
 
I don’t think there’s a real answer to your question, different prices for different areas. The digging out and laying the base layer shouldn’t change a great deal no matter what. But ask what the slabs are being laid on whether it’s a layer of mortar, or a dab of mortar on a corner of the slabs. Again it depends on what stone or slabs your having down.
As daft as it seems I looked on eBay and found a yard in Barnsley, it’s an hours drive but I went up and inspected the slate. It was excellent and a lot cheaper than elsewhere. Why? He imports it direct and sells to other traders who mark up.
Myself, finding a good person, builder, garden landscaper or whoever you choose is paramount.
Lastly, the guy who laid the slate for us never used mortar, it was like a minute grain that’s brushed in wet. It’s excellent and finishes the job well. What he did do as well was put a sealer on the slate. It brings the colours out fantastic, but be careful some sealers are slippy.

Speaking as a professional QS/Estimator its difficult to provide a rate without a specification for the job, despite what has been said a day rate approach can be a good way to proceed if you are confident in the tradesman. As I don't know where you are its difficult to give you an idea of a trademen's rate but in the home counties you are looking at circa £200 day.
