Also, if you “can’t get off” the tee, might be better to focus on this first. Plenty of options for drivers, woods, hybrids to make it long enough to be playable.

I'm having lessons as well, starting with a new coach, as mentioned above. Just seeing if there's any reason why I can't attack my game with a double-pronged approach!
 
If you cannot hit anything over an 8 iron very well why bother with adjusting all the longer the clubs particularly 4 and 5. Although personally I would adjust 6 and 7. I also would not bother adjusting GW SW LW in the PXG. The cost of adjusting is way less than the cost of a new club

Lots of players, including myself, have ditched these in favour of rescues/hybrids.

For length adjustment just try gripping lower down to see how it goes.

The point being is that there is more value in getting different clubs (7 wood? 5 hybrid? Mini driver?) on the longer end of your bag than splitting hairs about the length of your long irons.
 
These Srixons are longer than my PXGs! 38.25" 7i (unless GC4C measures the 6i for Iron Sets?).. and only 6 clubs. Would need to then go and buy a GW, SW, LW... not sure this fixes my problem! But appreciate the suggestion; thank you!
The cure to your problem is not new equipment it is lessons. Sorry to be blunt but a 30hcp after 3 years of playing weekly isn't great. You are focusing on the wrong things.
 
Spending £100 taking half an inch off your clubs could be much better spent on 2 lessons. Do this first then when you get your HC down a bit then start worrying about the other stuff (if you really have to). You seem like the classic case of an overthinker. Clear your head, setup to the ball and whack it then repeat. Its more fun that way 😆😆:LOL::LOL:
