we are a group of 8-12 looking to do a 2 night 3 round stay in england…( only england)
would like to stay insite with maybe 2 courses onsite
any suggestions please

You don't give an idea of geography other than England, you might want to scale it down a bit. Budget would help as well.

In the meantime, covering the NE,

Ramside Hall, Durham
Slaley Hall, Hexham

If the budget is bigger, Close House, 15 minutes west of Newcastle
 
May be considered remote depending on where you are coming from - but St. Mellion in Cornwall would get my vote.

36 holes, decent hotel with good leisure facilities

Nicklaus course is a beauty and beast in equal measures. Has it's own Amen Corner 10th, 11th & 12th

Kernow course much more relaxing and fun to play with some nice holes including a great risk reward driveable par 4 over water.
 
Radical thought. Book out the dormy House at Burnham and Berrow. 27 holes on site and play another day at Weston.
Things to be aware of...

Open FQ has been moved from Burnham due to the state of the fairways (in particular); mats are likely to be in play all year (and beginning of next) as they look to recover and host Open FQ next year.

Most of the fairways at Weston have been shocking for years, and showed no signs of improvement when I was there this week.

If you want two courses then Thonock Park, Belton Woods, Carden Park, Greetham Valley, Breadsall Priory and Forest of Arden all fit the bill. Played them all and would happily go back to any of them.
 
Are you dead set on staying on site?

If not, I'd suggest a hotel in Cromer and play Cromer and Sheringham.
Or stay at Heacham Manor and play there and Brancaster/Hunstanton.
Or Aldeburgh and Thorpeness.
