Things That Gladden The Heart

Once had a steak at the Elm tree at Elmton ( that was after a starter of Squirrel). Anyway it was gorgeous, medium well done. It was so tender. Anyway I told the manager it was the best I have ever had so compliments to the chef. His response surprised me. It was “ it’s not just down to the chef, you could have cooked that. It is down to the meat I buy. I do not buy rubbish steaks. They are quality steaks”. He was adamant that the best steaks are from quality cattle and just coz it says Rump, rib eye sirloin etc etc don’t mean quality.
