Here's mine for starters;

1) Le Touessrok (Ile aux Cerf, Mauritius)
2) Cornelia Faldo (Belek, Turkey)
2) Ypsilon (Liberec, Czech Republic)

Have also played Wentworth (West course) and The London Club (Heritage) but I wasn't impressed with either, despite all the hype.
 
Carnoustie
Royal Cinque Ports
Blairgowrie (Rosemount)

Played so many nice courses, some well known, some that have never been heard of, it is really difficult to chose 3.
 
North Berwick (west links) - the most fun and best holes

Kingsbarns - the views, the greens, the experience

Gleneagles (Queens) - most consistent greens i've putted on, very natural feeling surroundings
 
Not played many courses (30ish) and never played abroad, so here's my top 3 from a limited list.

St Mellion (Nicklaus)
Forest of Arden (Arden)
Trevose
 
1. Machrahanish
2. Ballyliffin Old Links
3. Loch Lomond

Some cheeky courses there ,also Pitlochry a great course on a nice day and Portstewart (Strand) what a front 9 the way it meanders through the dunes.
