Kitchen Knife recommendations

I have got some Kitchen Devil knives that are over 40 years old and they are still good.
They do not get used all the time because I have other makes such as Prestige (the more expensive ones) which have lasted even longer.
 
Watch out in regards Sabatier as the name is not a single brand. Maybe @Rooter can point you in direction of specific ones. All I know is to look for ones that are made in Thiers rather than generic "made in france or asia" knockoffs.
 
I was always complaining whenever I picked up a knife it was blunt, one Christmas I was bought a Global carving set, I was so impressed I splashed out on a set of 6 knives in a block, they have been good, always followed others advice re storage and washing and I find they rarely need sharpening.

I always bought my stuff from Nisbets.

For domestic kitchen, you only really need 2 knifes.

A proper chef knife. something at least 24cm
A small paring knife, 8-10cm

If you really need more, a Santoku style is nice, and is probably now my go to, for most jobs. You dont kneed a fileting knife, or boning knife at home really (Most people dont, and i can filet any fish with a chefs knife anyway)
 
We have knives from Zwilling, and they are excellent. I have an electric 2 stage sharpener that sets the knife angle and gives a lovely sharp knife (only need to use it about once or twice a year).
And yes, dishwashing knives blunts the blade, so ours are handwashed:)
 
Don't know anything about Sabatier knives but for me you can't go wrong with Victorinox knives. Great for carving and sharpen with a steel to keep the edge.

Remember, a blunt knife is a dangerous knife.
 
Got myself a set of knives from Flint and Flame earlier this year. They're fantastic. Although I've also previously had some very good Sabatier knives.
 
Sabatier are good quality knives.

We have a set of kitchen knives that I was given by WMF when I did some work for them in Germany. Absolutely fantastic.
 
I've got a Global big chopper, a Wusthof 20cm chefs knife and standard pairing knife.

I prefer the Wusthof.
 
Got an Amazon voucher from work so I was wondering what to buy, I remembered this thread so had a quick look and I've ordered a set of Stellar Sabatier knives to replace my old knackered cheap set (y)
 
It’s a long way to go, but. Me and Missis T once went on holiday to Thailand. I don’t know how but I ended up using a Kiwi knife. Long story short i Thought I am taking some of them home. I eventually found some in a Tesco out there on the last day. I bought 6 different knives. £16 they have been fantastic. Thin blades and still sharp.
Me brother was once given a a Japanese set off his in laws who were given them and said they would never use them. He unrolled them and sweet mother I have never seen anything so sharp in my life.
