Other than being a different colour, is there any difference between, say, the club head of an Adam's Tight Lies "Women's" fairway wood and a "Men's"? Shaft's obviously will be different.

A lot of women can't handle a stiff shaft very well. This means they require more loft to help get the ball in the air, drivers are often 13 or 14 degrees.
The rest is pretty obvious stuff, lighter and shorter shafts along with thinner grips.
