Seems my Sister has become a stat of the not properly cooked bird and everyone who ate with her yesterday is feeling poorly....

On the bright side, we were on lunch duty today and now have the day off...happy days

might try & convince HID that I need some exercise after her 'wonderful' Xmas lunch...9 holes or the range :)
 
we have a digital temperature probe now, best thing you can have in the kitchen. no more uncooked or overcooked meat :)
 
I really do not know how this still happens. Turkey cooking is simple 20 mins to the pound + 90 minutes. Start it off on the highest heat for 30 mins then turn it down to gas 5 for the rest of the time. Take the foil off for the last 45 mins to brown. Cover the bird back in foil when you take it out and cover with a couple of towels and let it sit for one to two hours to rest.It will still be warm enough to serve when you have cooked the roasts and veg. Simple. No turkey trotts ever again.
