Not sure if anyone else can help but spent a few weeks there 15 yrs ago as a base for the numerous ski areas nearby. Stayed in cheap hostels though!
Place is very pleasant if a little sterile, in that regard I'd stay centrally nr downtown or between airport and downtown. I don't think there are any bad/dangerous neighbourhoods in SLC.
Bit odd if you want a drink, someone already inside has to sponsor you into a bar, beer and wine ok, liquor a bit of a no-no. Well thats how it was when I was there. Polygamy still going strong too. Like Vegas there is a zero tolerance to homelessness/beggars/littering, city kept very ordered and tidy by the Mormons running it.
re hotels I'd think they'll all be of a fair standard. City probably wouldn't allow dives, its a bit like that. I suppose your budget per night is key.
