In general what do Committee Members do ?

Supposed to oversee the running of the club, set annual subs, organise matches/comps all that sort of stuff. The responsibilities are to the fellow members of the club. In reality they spend most of the time bickering amongst themselves in my experience.

Well, it depends on the club but usually they are each on one or more sub committees:

House - look after the clubhouse, bar, staff, catering
Greens - all aspects of the colf course maintenance, setup, budget etc
Competitions - organising and running all club competitions
Handicap - administering the CONGU UHS / making it up as they go along <delete as applicable :)>
Membership - promoting membership, interviewing/integrating new members
Social - planning, booking advertising social events to boost income
Marketing - looking for and exploiting opportunities to increase membership, other income, participation etc
Finance - Day to day banking and accounting.

Each are usually allocated a budget or spending limit. In addition to that there is normally a monthly "full council" meeting which decides on general strategy, major spending etc

A lot of clubs cannot afford professional management, as such sometimes you'll find that the committee members literally run the club, in all areas/sub-committees.
Other clubs they can just be a group of old busy bodies who think that being on the committee gives them extra rights over other members.

At my club they do everything apart from The Secretary, green staff and catering staff.
In NZ when I served on the " Greens " it was mostly helping out on the course to supplement our two greenkeepers.

no not at all, my club is possibly looking for some volunteers, and i am learning that each clubs committee is set up differently

It's worth finding out beforehand, I was asked about becoming treasurer, when I found out that it's basically a full time job there was no way I could do it.

I am on our clubs ladies committee, mostly seem to be decorating the clubhouse or removing sad decorations. We do also have our own treasurer, secretary and handicap secretary.

The problem with committee work -and I do a lot of it, is that you get a bad rap for doing an awful lot of work, for no pay. It's the old 80/20 rule where 20% of the people do everything for the other 80%, except in golf clubs, where it's more like 95/5. As you have seen from some of the posts on here already, most think you do it because if some ill perceived authority, when actually, most do it because they love their club and just want to see it prosper. Committee members are needed in the first place because golf clubs, certainly in the UK, are largely self running. In other words they employ very few people in the running of the club and the members do most if it themselves. Most golf club members very rarely consider how much their subs would be without the committees and those that volunteer to serve on them.
I have to say I really enjoy working on the committees and it is rewarding when you see a thriving club. If you are up for it, give it a go, but be prepared to put in quite a bit of time.

In that case, the people I thought were our committee members clearly aren't, I'm really confused now

I'm now the marketing director. Kind of self-evident really. Only started last month, and my observations thus far would be that the loudest contingent of the club is not necessarily the biggest, that everyone is prepared to tell you where you are getting things wrong, but few are prepared to give up their time to help you get it right.

In the spirit of my role, please follow the club on twitter (handle in my sig below!) and more importantly come down and play our beauty of a course. Free-draining and still on full tees and greens!

A pretty pointless answer, you clearly have never been on a committee.

Without the hours and hours of VOLUNTARY work that they put in, your club would probably collapse

The committee do a lot of unseen work to keep the course/club working - they make the hard and easy choices and will always refer to the membership for the big choices. They are always seen as a target for when things go wrong and don't get the praise when things go right - but it always voluntary with little or no reward.

I'm sure they do plenty but at my course they get a great reward, they can choose a medal tee time at the start of the year which is then there's for the rest of the season.

Plenty of work done through the various committees at my club and to be fair they do a good job across the board. It's usually the same old faces with the same old gripes irrespective of who is in office but give them a chance to stand or serve and amazing how quickly they shut up. It is an area I would be interested in getting involved in at some point

Come on, not a huge reward for the commitment involved. Would you volunteer your services for a medal tee time?
