Depends where you go.
They vary a lot but the SAM fitting is very good.

Are you close to Cambridge? I think that’s the SC fitting centre but lots of independents dotted around the UK.

Just been speaking to him again, he is more of an Evnroll fitter so this is more relevant.

I was fitted for an Evnroll many years ago at Core Golf in Thame, it think its closed and no longer trading now. Think most places who offer custom fitting have SAM Lab.
I've also had a fitting for numerous Scotty Cameron over the years. I would recommend it, great fun.

Capto is becoming increasingly common as it is available at a lower price point than SAM...especially in less specialised fitting centers such as retail outlets.
