So was talking to the wife and she was asking about cooking veg (i used to be a chef!)

Anyway, told her if it grew underground (spuds, carrots etc), start it in cold water and bring to boil. If it grew above the ground (broccoli, runner beans etc), put it into boiling water.

Another one for guaranteed yorkshire puds. Equal VOLUME of egg, milk and flour. So get 3 cups the same size, break your eggs and match the volume for a perfect mix every time!

PS. Im bored waiting for a pan of water to come to the boil. (It boils faster with a lid on!)
 
When we went to Vietnam me and Missis T went on a days cooking course with Linh. It was a fantastic days cooking. We dropped a Major Bollok not going to the market to see how the fresh ingredients we cooked with were bought. Both meat, fish and veg.
Anyway tip No1. Buy bloody good knives. Mine are crap. Got some fantastic ones at £2 each fantastic apart from when they go rusty
 
Always have a good bottle of wine on the go whilst you cook🍷

I cook reasonably often and like to use a pressure cooker for speed and taste, my other half (a great cook) never uses it!
 
Don't put the beans on top of the toast, it makes the bread too soggy

When cooking steak, you don't need to touch it or press on the meat to know when it's medium rare. As soon as you see the blood pierce the surface of the steak it's medium rare.

Also, before you put your steaks into the pan, make sure it's hot enough. If the pan's not hot enough you won't get the caramelisation.

The best steaks I have bought are from aldi, never had a bad un. Always cook them on a griddle pan and let them stand.

I 'read' it as well. Or better, I also watched Jamie's 30 minutes dinner ;-)

But when making pasta mysel it's 199g flower and 1 egg to do the right amount for 2 people.


I find it really hard to portion anything and always do to much. These 'rules' are very useful for me.
 
Pierce the lid then 5 mins in microwave. That gives you enough time to get a beer from the fridge, remove the top and pour into a glass. 👍
